{tuscan veggie chili}

Dale and I absolutely love soups in the winter! At dinner we load up on veggies. I decided to combine two of our favorite things {soup&veggies} together to make a yummy soup! The recipe can be found {here}. I modified it a little bit {no cheese, veggie broth instead of chicken, no zucchini} and added some quinoa to pack in the protein and make it a little bit more substantial. All together this recipe takes about 35 min. and it's so tasty!


{drain and rinse chick peas, then use half of can and mash}

{dice onion, celery, and carrots}
{mince garlic}







{add broth and diced tomatoes}
{add just 1/2 c. of quinoa}

{if your husband's like mine, he will need a little more than soup for din}
serve and enjoy!
